There are so many things happening in my life right now. It’s a whirlwind of major life changes and all that little stuff that makes us crazy as the holidays approach. Even after having the better part of a week off, I feel like I’m behind. And this blog and the people who read it? Totally neglected.

Just because I’m feeling like such a slacker, I decided to put together a post full of awesome for y’all and THIS is it.

Just because it’s delicious, I’m sharing a cupcakes recipe I’ve been playing with for the last few weeks. It’s the perfect addition to any holiday potluck or even just as holiday treat when you’re needing something to get you into the right frame of mind. Best part about this recipe, it’s EASY.

Antipasto Salad in a Jar

What you need >>

  • 5 quart-sized mason jars, wide mouth {with lids}
  • For salad:
  • 1/2 lb each of high quality mortadella, salami and capicola, cut into bite-sized pieces
  • 1 head iceberg lettuce, chopped
  • 4 medium tomatoes, chopped & seeded
  • 1/2 medium red onion, sliced
  • 1/2 jar sliced pepperoncini
  • 6 oz can sliced black olives
  • For dressing:
  • 3 oz EVOO
  • 3 oz white balsamic vinegar
  • 3 oz water
  • 1 tbsp gluten free dijon mustard
  • salt & pepper to taste

What you do >>

  1. Shake or blend dressing ingredients, then add 3 tbsp dressing to the bottom of each jar
  2. Divide remaining ingredients between jars in the following order: olives and pepperoncini, onion, tomato, lettuce, meats
  3. Place lids on jars and refrigerate immediately
  4. To serve, shake salad gently in jar and pour into a large bowl

    I would love a Kitchenaid Mixer but I would take any nice mixer right about now because my old one broke during Thanksgiving baking.

    the mixer would be a great prize to win. moving into a new apartment with my fiance and we’re trying to get together home-y things!
